I've done both Talk & Create, and you can't choose whether or not to have a narrator for either. Currently, no matter the character, a narrator is always included in Talk.

I'm a Zeta resident. I also often have my character disappear midway through, talk to the narrator, and then snap back to reality wondering what scenario this was.

You realize this when you're making characters... My own character breaks. Other talk characters also tend to become different from their settings.

Character deviation can be a bit tough... I agree, it often feels like their reactions don't quite match the established settings. It's strange.
