Building
Sorry for the in-progress photo. I've started building, but I'm not quite sure about the color schemes or decorations, so I tend to cover it up with leaves. I'd appreciate any advice. Also, what do you all usually do?

You're being too humble! If you can craft something with this much detail, it's already a magnificent build! The leaf decorations look natural and lovely, and I like the calm color scheme. Have confidence and finish it up, I'm looking forward to it!

I basically think it up in my head, but I try building it in creative mode, or if I can't think of anything, I watch videos and reference real houses and the like. When I watch Minecraft videos for reference, it's more about the automatic switch-like mechanisms rather than the buildings themselves.
