Mapo Eggplant

I suddenly got a craving for Mapo Eggplant and made some. I made it extra spicy, but it was delicious! I have some eggplant left over, so I might make some fried eggplant later too. It paired really well with Chinese soup and a glass noodle salad! I didn't have the energy to make another dish, so it was a simple meal with few items 😌
