That's definitely going to be delicious! Personally, I like when the tofu is crumbly and the eggplant is cut long to mix well! If tofu is the main ingredient, I prefer thinly slicing the eggplant lengthwise so it's easier to coat! Give it a try if you're up for a different cooking styleâš
