The secret of Onggi lies in its property of preventing water droplets from escaping through its micro-pores due to their cohesive nature, while still allowing air to pass through. It's amazing how they intentionally used rough clay to create these breathing holes. Ultimately, it was these tiny pores that preserved the taste of soy sauce and kimchi.
