I've wanted to change this for a while. I originally used quartz half-blocks, but I tried switching to concrete half-blocks. Do you think concrete slabs are better, or should I stick with the original quartz half-blocks?

Both are good, right? Using both is also an option. There's no rule saying you have to pick just one. If you like both, use both. If you prefer concrete a bit more, go with concrete. If you like quartz more, then quartz. That's how I build things too.
