Cucumber Cold Soup I Had in Gwangju
It must have been over 10 years ago. I had it at a Korean set meal restaurant in front of Gwangju Station. It was a cold cucumber soup, but it had a strange mix of roasted grain powder (misugaru). It was sour, sweet, and nutty, with a great balance. Since then, I've tried to recreate it whenever I think of it, but I haven't succeeded. I asked in various communities... Someone from Jeolla Province suggested it might be seaweed jelly (umugaseori) cucumber cold soup. Now that I think about it, I think there might have been something like transparent jelly...

Cucumber soup with roasted grain powder? That's a combo I've never heard of before, it sounds really fascinating! I can imagine the sweet and savory taste, I really hope you find it again. If there was also agar-agar jelly, it would have been a real delicacy!
