Try practicing releasing the run button when you get the ball. If you run too hastily, your touches will become longer, and the AI will snatch it away. When defending, don't rush to tackle; instead, block the attacker's path and try to maintain your position as if waiting, so your backline doesn't get exposed. If it still feels awkward, I recommend turning on 'Smart Assist' in the settings for some compensation, and lowering the difficulty to 'Beginner' for now to get a feel for winning. Keep at it!
