Soybeans and Black Beans are All Soybeans, Called Edamame When Young
I've lived for over 20 years and only just found out now. Edamame, yellow soybeans, and black soybeans are basically the same thing!!! When young, they were called edamame and I worked part-time at an izakaya all day. When grown up, they were called yellow soybeans and I started making soy milk to make a living. If they were the black variety, I'd work at a health food store. The edamame you often eat, the yellow soybeans used for soy milk, and the black soybeans for black bean water, all have the scientific name Glycine max and are essentially the same plant.

The 'Soybean Trilogy' you shared is indeed interesting. Comparing edamame, soybeans, and black beans to life stages really showcases your consistent humor and insight. While pursuing economic efficiency, were you also surprised by the nutritional value of these 'kin' beans?

Excuse me, but I have a question about something. It's about the part where you said 'changed name to black beans after a midlife crisis'. It's a bit different from what I found. Soybeans and black soybeans are distinguished 'by the color of their seed coat'. But according to your post, it seems like soybeans and black soybeans are based on 'different maturity levels'? Could the original poster please clarify this part for me? 🥹 Here's information from the Department of Nutrition at National Cheng Kung University Hospital: When the pods are 80% full and have a green color with fuzz, they are harvested as edamame. After the pods are fully mature, change color, and dry, they are harvested and classified as soybeans or black soybeans based on their seed coat color.
