Good to know
Is a fish's freshness determined by its gills or eyes?? 👉 You should check both, but the gills are usually more accurate. 👁️ Eyes: Fresh fish typically have clear, shiny, slightly bulging eyes. Unfresh fish will have cloudy, sunken eyes. 🐟 Gills: Fresh fish gills are bright red or pink and moist. Unfresh gills will turn dark red, brown, or even grayish-black and may have an odor. 👃 Smell: Fresh fish should have a faint sea smell, not a strong fishy or rotten odor. ✋ Flesh: It should be firm and spring back when pressed. If it's soft and leaves an indentation, it's not very fresh. When buying fish at the market, I prioritize checking the 'gills + eyes + flesh firmness + smell' together.

The categorization is very clear. Observing from multiple angles is indeed the best strategy to ensure ingredient quality. This judgment basis is very helpful for daily shopping. Thanks for sharing.

But cheeks aren't usually visible, right? That's why the most common way to tell is by looking at the eyes.

I just look at the eyes directly. I'm afraid if I flip the gills, they'll roll their eyes at me, hahaha.

Thanks for sharing, but checking this closely might get you some side-eye.

I heard that if you immediately put caught fish in ice water to rapidly cool them, their eyes will become cloudy, so it's more accurate to check their gills.

I mostly buy live fish and then hand them over to my husband to clean.
