Family Recipe 59 - Stir-fried Scallion Pancake

Ingredients: Scallion pancake, bean sprouts, cabbage, eggs, pork tenderloin, salt, sugar, soy sauce, white pepper, rice wine, sesame oil Instructions: 1. Pan-fry the scallion pancake until golden brown on both sides, then cut into strips and set aside. 2. Shred the cabbage, trim the bean sprouts, scramble the eggs until cooked, and slice the pork tenderloin. Marinate the pork with soy sauce, rice wine, and white pepper. 3. Heat oil in a wok and stir-fry the cabbage and bean sprouts. Season with salt, sugar, soy sauce, white pepper, and a little water. 4. Once boiling, add the scrambled eggs, pork slices, and scallion pancake strips. Stir-fry until well combined. 5. Turn up the heat to high and reduce the sauce. Drizzle with a little sesame oil before serving. This scallion pancake is homemade. If you find it troublesome or don't know how to make it, you can buy a store-bought one, pan-fry it yourself, or use a pre-fried one.
