🍇 The Taste of German Autumn Limited Edition - Fermenting Grape Must

Every autumn, a special wine called 'Federweißer' (white grape must) appears in the refrigerated sections of German supermarkets. If made from red grapes, it's called 'Federroter'. What makes this wine unique is that its fermentation isn't complete yet! After fresh grapes are pressed, yeast gradually converts sugars into alcohol and carbon dioxide. Therefore, the new wine has natural bubbles, a rich grape aroma, and sweetness, with a taste somewhat like a lightly sparkling grape juice. September to October is the popular season in Germany for tasting new wine, and many locals enjoy it with traditional onion tart (Zwiebelkuchen), forming a unique autumn food culture. As fermentation continues in the bottle, the sweetness of the new wine gradually decreases, and the alcohol content may increase. To allow the gases produced during fermentation to escape smoothly, the cap usually has a venting design. Thus, it must be refrigerated and stored upright, not horizontally. Interestingly, although these two musts in the photo are sold in Germany, the grape raw materials come from Italy!
