Why does freshly brewed hot tea smell more fragrant than tea that's been sitting for a while?
When you brew a cup of hot tea, you can often smell a distinct aroma before you even take a sip. But as the tea slowly cools, sometimes the fragrance seems less intense. This is because many aromatic compounds in tea leaves are volatile. At higher temperatures, they evaporate more easily into the air, allowing us to perceive the tea's aroma more clearly. As the tea gradually cools, the rate at which these aromas are released typically changes as well. However, this doesn't mean hot tea always tastes better than cold tea. The aromatic composition varies depending on the type of tea. Some teas are best enjoyed hot, while others reveal more delicate flavors after cooling slightly. If you want to savor the aroma of your tea, try smelling it first at an appropriate temperature, then take small sips to experience the different tastes brought about by the temperature changes. Also, be aware that freshly brewed hot tea can be very hot, so it's more comfortable to let it cool down a bit before drinking, rather than rushing into it. The aroma of a cup of tea doesn't just come from the leaves themselves; temperature also influences how much detail we can perceive.
