Yamaokaya's Shoyu Ramen
Is Yamaokaya, a ramen shop mainly in the Tohoku region but a nationwide chain? I went to Yamaokaya. I added a seasoned egg to the Premium Something Shoyu Ramen (vaguely remember...ð«š). A ramen with chewy seaweed, chopped onions, slightly firm chashu pork, and one sheet of nori, with a soup that has a little bit of back fat floating in itð When ordering, you can choose from three levels for noodle firmness, soup richness, and amount of back fatð

It's the best with plenty of seaweed and onions! The soup with lots of pork back fat looks like it'll go great with rice. I'd love to try such delicious ramen once, too!
