The Three Stages of Banana Ripening

A banana's ripeness directly affects its glycemic index (GI). As a banana ripens, the starches within are broken down by enzymes into simple sugars, significantly increasing its glycemic impact. Green Bananas (Unripe) Appearance: Greenish peel, astringent and firm texture. Estimated GI: 30–42 (Low GI) Carbohydrate Form: Contains a high amount of resistant starch. Blood Sugar Impact: Digests the slowest, providing sustained fullness and stable blood sugar levels. Its resistant starch is not easily absorbed by the small intestine and acts as a prebiotic, nourishing good gut bacteria. Yellow Bananas (Slightly Ripe) Appearance: Golden peel, possibly with slight green at the ends or just turning yellow. Estimated GI: 42–51 (Low GI) Carbohydrate Form: Resistant starch begins to break down; starches and natural sugars coexist. Blood Sugar Impact: Moderately sweet. The ratio of soluble dietary fiber (pectin) and resistant starch remains relatively balanced, leading to stable blood sugar fluctuations. Suitable for general daily consumption. Spotted Bananas (Overripe) Appearance: Brown spots (commonly called 'sugar spots') appear on the peel. Estimated GI: 52–62+ (Medium GI) Carbohydrate Form: Most resistant starch has converted to glucose, fructose, and sucrose. Blood Sugar Impact: Soft texture, high sweetness, digests and absorbs very quickly, causing a rapid rise in blood sugar. Although the GI is higher, this stage boasts the highest content of polyphenols and antioxidants.

Green bananas are the best, but they're hard to eat raw. I heard there's green banana powder, but I don't know what it tastes like.
