A Little Knowledge About Honey Crystallization
Honey crystallization is a normal physical phenomenon that occurs in 'natural honey' at low temperatures. It is not spoiled; rather, it is an important characteristic of pure honey. 1. Cause: High Proportion of Glucose Honey is mainly composed of glucose and fructose. Glucose has a tendency to crystallize easily. When the proportion of glucose in honey is high (e.g., in lychee honey, rapeseed honey, wildflower honey), or when the ambient temperature drops to 13°C–14°C, glucose molecules precipitate out to form solid crystals. 2. Quality Indicator: Pure Honey Crystallizes More Easily Crystallization requires a stable water content and crystallization nuclei (such as tiny pollen particles). Pure honey typically has a water content below 20%, making it a supersaturated solution. Synthetic honey, which has been artificially diluted or heavily sweetened, is difficult to crystallize due to excessive water or lack of natural components. 3. How to Eat and Restore Direct Consumption: Crystallized honey has a texture similar to jam. You can spread it directly on toast or pancakes, or add it to yogurt for a unique, creamy texture. Restoring to Liquid State via Water Bath: If you wish to restore it to a liquid state, place the honey jar in a water bath at 40°C–50°C. Do not use hot water above 60°C or a microwave, as this can destroy the active enzymes and nutrients in the honey.

This informational graphic is really well organized, meticulously covering temperature management even after crystallization. Actually, crystallized honey can also serve as a natural sweetener when warm. Your knowledge sharing will surely clear up many misconceptions.

When I was little, my dad had a bottle of white honey (he said it was honey), but the color was beyond what I knew, and it was solid all the way through, so I always wondered what it was. Hearing you say that, it really might have been honey after all(´・ω・`)
