Carrot Rolled Omelette
Failed to flip it, so it fell apart 😂😂😂 But it was still delicious. Shred the carrots, stir-fry them until cooked, then let them cool. Add them to beaten eggs, then pour into a preheated non-stick pan. Before it's fully cooked, decide if you want to add anything else (I added corn kernels and chopped green onions). Once the first side is cooked (it will puff up), flip it and cook for a bit longer.
