Pickled Bamboo Shoots (Suan Sun)
* Fresh Bamboo Shoots: About 1 jin (600g). It's recommended to choose thicker, juicier bamboo shoots (like Ma bamboo shoots or Green bamboo shoots). * Salt: About 20 to 30 grams (approximately 3% to 5% of the total weight. Do not use too little salt, or they may spoil easily). * Cold Water (or boiled and cooled water): Enough to cover the bamboo shoots. * Container: A clean, sealable glass jar or ceramic crock (must be scalded with hot water for sterilization beforehand, and ensure it is completely oil-free and water-free). Preparation Steps 1. Prepare the Bamboo Shoots * Peel the outer layers of the bamboo shoots, trim off the older, tough fibers and the hard base. * Cut the bamboo shoots into your desired shape (usually slicing them thinly or shredding them finely speeds up fermentation and allows flavors to penetrate better). 2. Blanching to Remove Astringency (Optional Step) * Place the cut bamboo shoot slices in boiling water for about 5 to 10 minutes to remove any bitterness or astringency. * Remove from the water, rinse with cold water, and drain thoroughly. 3. Jarring and Salting * Put the drained bamboo shoot slices into the sterilized and dried glass jar. * Pour in cold water, ensuring the water completely covers the bamboo shoots. * Add the salt and stir well until dissolved. 4. Sealing and Fermentation * Seal the container. Place it in a cool, well-ventilated area for fermentation. Fermentation Time: Generally takes about 3 to 7 days. Fermentation is faster in summer due to higher temperatures; it may take over a week in winter. When the water becomes slightly cloudy and has a distinct, natural sour aroma, the pickled bamboo shoots are ready.

The process of handling ingredients is so meticulous, even the details of astringency removal and sterilization are thoroughly covered, which is truly rare. I've deeply felt this respect for cooking.
