A Simple and Delicious 'Tomato and Egg Stir-fry' Recipe, Ready in 3 Steps!

Ingredients 2 Tomatoes (cut into chunks) 3 Eggs 1 Scallion (chopped) Seasonings: A pinch of salt, 1/2 tsp sugar, 1 tbsp ketchup (optional), a little water Cooking Steps Scramble Eggs: Whisk eggs with a pinch of salt. Pour into a hot oiled pan and stir-fry until about 70% cooked (like scrambled eggs), then set aside. Stir-fry Tomatoes: Use the same pan (no need to wash). Add tomato chunks and stir-fry until slightly softened and juicy. Add ketchup and a little water, then simmer for 1 minute. Combine: Pour in the scrambled eggs, add sugar to taste, and gently mix everything together. Sprinkle with chopped scallions before serving.
