Tainan's Top Alleyway Guo Shao Yi Mian and Oyster Omelet

Although I'm already very familiar with the owner and several of the older ladies here, I wanted to share what I find truly remarkable about the old owner. He has now bought the houses on both his left and right sides and expanded even further. He started this business before I was even born. Originally, there was only an oyster omelet. It was placed in front of the night market, and back then, it didn't even have a name. The place in your pictures is the current shop; it used to be only one-third of its current size. Later, he bought the warehouse on the left for ingredients, and then bought the property on the right to expand the shop. Before his daughter started helping out, there were actually only a few items: oyster omelet, Guo Shao Yi Mian, and milk tea. The braised pork rice came later. There used to be fish ball soup and handmade braised meatballs too. After his daughter started helping, the soup and braised meatballs were removed and replaced with pudding. Their foundation was the oyster omelet, and second was the Guo Shao Yi Mian. These two dishes alone supported their entire large family. All the employees inside are the old owner's family – his daughter and son-in-law :). And actually, the old owner used to only have two days off per month, so truly delicious food never gets old. If you don't need to learn much, just being consistent is your income. Everyone can go and see for themselves normally. The sauce for the oyster omelet is basically something you won't find anywhere else, similar or the same, because it was taught to the owner by his master, who is no longer around.

Everyone, I have one more thing to add. Since I'm from Annan District, there are actually many hidden alleys and streets. To add a little surprise, there's a place to eat in the big fruit and vegetable market, and there's a surprise there too. Discover it slowly. A hint: they only sell one type of animal, using various parts of it to make a clear soup served with white rice. Basically, if you don't go before 10 AM, you probably won't get any. They sell about five heads a day. Back to the main point, as far as I remember, when I first ate there, the earliest prices were: Oyster omelet 40, Kuay-tiao (noodle soup) 45. But now the price for Kuay-tiao is absolutely reasonable. Let me give you a little inside scoop: it's made with a completely pure, slow-simmered bonito broth, and the process is the same every day. The original owner passed it down to her daughter exactly the same way:).
