Today's Omurice Soba
Dinner tonight was Omurice Soba! I stir-fried the frozen mushroom mix, onion, and some beef scraps that had been sleeping at the back of the freezer. Added water to the pan, along with garlic, ginger paste, and a bit of chicken stock powder. Once it lightly boiled, I threw in one portion of yakisoba noodles while there was still water and loosened them up. Then, I mixed in the included sauce, and for an extra kick of flavor, added oyster sauce. Once the moisture evaporated, I turned off the heat temporarily and added cooked white rice (one cup). I mixed it all until the white rice turned brown from the sauce. I spread plastic wrap on a plate, poured in beaten egg, and microwaved it for another minute. I plated the soba-meshi, then carefully transferred the microwaved egg from the wrap onto the soba-meshi, sprinkled some chopped green onions on top, and it was done! I usually cook 1.5 cups of rice for dinner, but adding the yakisoba and plenty of ingredients made it really satisfying 🙌

Putting rice in yakisoba sauce is a new one! Seems like it would go great with an egg.
