Is it okay to uninstall?
My phone's storage is low, I haven't really used it lately, and it's kind of sluggish, so I'm thinking of uninstalling Pokémon Sleep. Will my data still be saved if I uninstall it?

Is this about your Pokémon Sleep data? If so, it'll remain as long as you can recover your account. Your sleep records will also be saved. Source: me. I quit about 4 days after release and came back last year.
