Meat sauce with eggplant sounds delicious! Eggplant soaks up the sauce so well, making it really flavorful. Just adding eggplant to your usual meat sauce seems like it would give it a different twist!

I had a ton of bell peppers left over recently, so I finely chopped them and put them in my meat sauce! Since the sauce was already rich, it neutralized the bitterness of the peppers and I was able to use them up deliciously~âšïž
