The game updates every morning at 10 AM (events end, new events begin). However, events might start at other times too. It's best to wait until 10 AM to complete your orders so you can participate in events simultaneously without wasting stamina. When you're in the early or mid-game, it's advisable to maintain a good amount of gems. Try to save 10 gems daily for a stamina box and use the free small stamina whenever possible. Avoid spending extra gems unnecessarily, as the late game heavily relies on synthesizing the highest tier items, which requires a lot of stamina.

You can level up just by having money, it's quite fun. You don't have to be limited to leveling up with stamina, and the story is also quite interesting.
