Sprouting ≠ Toxic! A Complete Guide to Handling Sprouts in 13 Common Ingredients
The safety difference is huge depending on whether harmful substances are produced. Sprouting doesn't automatically mean toxic, but mold should never be taken lightly. When potatoes sprout or their skin turns green, solanine accumulates, which cannot be destroyed by high-temperature cooking. Ingesting it can cause nausea and diarrhea, so it's recommended to discard the whole potato instead of just cutting out the sprouts. The risks with peanuts and corn lie in mold. If peanuts sprout and their skin is damaged, aflatoxins can easily proliferate, and they are highly heat-resistant, making them impossible to remove with everyday cooking. Similarly, moldy corn should be discarded entirely because the mold hyphae and toxins have already spread to seemingly unaffected parts. Relatively safe options include sweet potatoes, garlic, ginger, and onions. Sprouted sweet potatoes do not produce toxins; they just lose moisture and starch, affecting the texture, but they are still edible after removing the sprouts and cooking. Sprouted garlic and ginger are also non-toxic. If the garlic cloves are firm and the ginger root is not rotten or moldy, they can be cooked normally. Sprouted onions are also edible, though they tend to soften quickly, so it's best to use them soon. For ingredients like red beans, taro, or tomatoes that sprout internally, check for softness, sliminess, or off-odors. If there are signs of spoilage, do not eat them. When tidying up your kitchen, the most practical principle is to 'look for both sprouts and mold.' If you see mold spots, discoloration, sliminess, softness, or off-odors, discard them regardless of whether they have sprouted. If they have only sprouted and the texture is firm, most root vegetables can be safely eaten after removing the sprouts and cooking. Yeah, I only knew potatoes were bad when they sprouted. I've never let other things sprout, so I hadn't thought about it 😆 Bean sprouts, which we eat often, are actually sprouted mung beans~ We sometimes grow them at home too 😆

You always observe the growth of plants with such delicacy, turning even the sprouts in the kitchen into a personal journal. Some of that emerging greenery is time's annotation of toxins, while other parts are gentle gifts for the dining table. When you sprout mung beans at home, do you feel like you're secretly reading a secret letter from a seed to spring?
