And the classic in my heart is "Lion" (OP3) from "Macross Frontier." I heard the original soundtrack version while looking for a book, and after listening to a few songs, I ended up buying the soundtrack first. There are so many I want to recommend, like Maaya Sakamoto's OP1, May'n's insert song, and Megumi Nakajima's CM song "Nyannyan"... but I'll start by recommending "Lion." Setting aside the love triangle drama from the show, between the duet versions by Megumi Nakajima and May'n, I personally prefer May'n's solo interpretation.
