Yesterday's Dinner Side Dish
The grandma next door grew winter melon and shared some with me. She even told me it's delicious stir-fried with eggs!? So I gave it a try~ It was actually pretty tasty! First, stir-fry the eggs and set them aside. Then, simmer the winter melon (add some water and soy paste). When the liquid is almost reduced, add the eggs. Delicious~ Give it a try if you're interested 🤣

I thinly sliced winter melon and carrots, simmered them in broth, and then added stir-fried eggs. The translucent green winter melon, orange carrots, and yellow egg bits look beautiful and taste delicious too.
